The school year is in full swing, and we’re all crazy busy – which makes healthy eating options all the more difficult to prioritize. So, here are three quick, no mess, no fuss snack recipes:
Vegetarian, Gluten free Energy Bites
- 1 cup Rolled oats
- 1/2 cup Almond butter
- 1/3 cup Honey, raw
- 1/2 cup Chocolate chips
- 1/4 cup Flaxseed
Mix all ingredients together in a bowl. Roll into desired bite sized pieces. Enjoy!
Gluten free, nut free, 4 ingredient Chicken Salad
2 – 3 servings
- 1 Can 16 oz chicken drained
- 2 Baby cucumbers diced small
- 1 Small onion diced
- 2 Tbsp mayo
Mix all the ingredients in a bowl. Salt and pepper as desired, best when chilled for 20 minutes. Serve in wraps, sandwiches, salads or with crackers!
Gluten free, nut free, dairy free, vegan Frozen banana bites
- 2 bananas sliced up
- 1 bar 70% chocolate (dairy free)
- toppings of your choice (we recommend fresh ground coffee, coconut, or colorful sprinkles for the kids!)
Melt the chocolate in a glass bowl in the microwave in 30 second intervals until smooth. Dip the banana slices in the melted chocolate using a fork until fully coated. Sprinkle on toppings. Freeze for 2 hours. Enjoy!
